Food Packaging Film: A Straight-Up Guide for NZ Hospo Operators

The wrong film costs you more than money — it costs you shelf life, presentation, and the trust of whoever opens that container.

You're a Kiwi hospo operator and you need to wrap, seal, or protect food. Someone's mentioned "packaging film" and now you're staring at a wall of options: cling film, stretch wrap, shrink film, barrier film. They're not the same thing, and choosing the wrong one for the job will bite you.

This guide breaks down the main types of food packaging film, what each one actually does, and which scenarios each suits best. No jargon. No upsell. Just the stuff you need to know before you buy.

What is food packaging film and why does it matter?

Food packaging film is any thin, flexible plastic or polymer sheet used to wrap, cover, or seal food products for storage, transport, or sale. It matters because the wrong film lets in oxygen, moisture, and contaminants — shortening shelf life and wrecking presentation.

For hospo operators, film does three jobs: it keeps food fresh, it makes product look tidy at the counter or in a fridge display, and it protects against cross-contamination. A sushi store has very different needs to a burger joint doing end-of-night prep. The film you choose should match the job, not just the price tag.

The main variables to think about are:

  • Oxygen barrier: How well does the film block oxygen? Critical for anything that oxidises fast — cut fruit, cooked proteins, sushi rice.
  • Cling: Does it stick to itself, to the container, or to the food surface?
  • Heat tolerance: Can it go in a microwave, a heat sealer, or does it melt on contact?
  • Gauge (thickness): Measured in microns. Thicker means tougher. Overkill for a sandwich, essential for bulk trays.

There are four types of food packaging film that cover almost every scenario in a commercial kitchen or retail food operation.

PVC cling film is the most common in hospo kitchens. PE stretch wrap lives in the cool store and loading dock. Shrink film is a retail play. Heat-seal film needs a machine but delivers the most professional finish and the best shelf-life extension.

Step 1 — Work out where in your operation film is actually needed

Before you buy anything, map the three or four points in your workflow where food is being wrapped or covered. Most operators discover they're using two or three different film types for different tasks — and often substituting one for another badly.

Common use points in a typical hospo operation:

  1. Prep and storage: Covering hotel pans, wrapping portioned proteins, sealing cut produce. PVC cling film or PE stretch wrap.
  2. Fridge display: Sushi rolls, sliced cakes, sandwiches in a cabinet. Cling film on a board or heat-sealed tray lids for a cleaner look.
  3. Transit and delivery: Keeping lids on containers, wrapping tray stacks. Stretch wrap on handles or over full trays.
  4. Retail or grab-and-go: Labelled wraps, shrink-wrapped muffin packs, heat-sealed meal components. Shrink film or barrier film on a sealer.

Once you've mapped those points, you're buying for specific jobs rather than buying a big roll of cling film and hoping it does everything.

Step 2 — Match the film spec to the food and the environment

The right food packaging film spec depends on what you're wrapping, how long it needs to last, and what temperature it will live at.

A few practical rules:

  • High moisture foods (sushi, cut melon, cooked rice): You want a film with low moisture vapour transmission. Standard PVC cling is fine for short fridge holds. For anything over 24 hours, a tighter-sealing heat-seal film is worth it.
  • Fatty or oily foods (cheese, cooked meats, pastry): PVC cling can absorb plasticisers from fatty food over time. PE-based films are a safer choice for extended contact.
  • Freezer storage: Standard cling film can crack and lose seal at freezer temps. Use a film rated for freezer use — check the roll label. Gauge matters here; thinner films fail faster.
  • Microwave reheat: Never assume any film is microwave-safe. Look for explicit labelling on the roll. Many PVC films are not rated for microwave use.
  • Hot food: Don't cling-wrap hot food straight from service. Let it drop below 60°C first. Steam pressure will burst the wrap and you'll burn yourself.

Step 3 — Get the roll size and dispenser right or you'll waste half of it

Roll width and dispenser quality directly affect how much film you actually use versus how much you bin. This is where a lot of operators haemorrhage money without realising it.

Standard commercial cling film rolls run 300mm and 450mm wide. The 300mm suits bench prep, covering smaller containers, wrapping individual items. The 450mm is your workhorse for hotel pans, large trays, and bulk prep.

A decent cutter bar on the dispenser box matters more than most people think. A blunt or bent cutter means torn edges, double-wrapping to fix it, and staff giving up and tearing it freehand. Buy the dispenser that matches the roll brand where possible — generic dispensers often don't grip the core properly and the roll spins off the edge.

For stretch wrap used in cool stores or on the dock, hand rolls (typically 500mm wide, 20-micron gauge) are standard. If you're wrapping pallets regularly, a pallet wrap dispenser handle saves time and reduces the amount of film used per pallet.

Is PVC cling film safe for direct food contact?+

Yes, food-grade PVC cling film is approved for direct food contact in NZ. The concern with PVC is plasticiser migration into fatty foods over extended contact — if you're wrapping cheese or cooked meat for more than a day, a PE-based or PVDC film is a safer call.

What's the difference between cling film and stretch wrap?+

Cling film is designed for tight food contact — it sticks to surfaces and itself to create a close wrap. Stretch wrap is designed to hold bulk items together under tension; it's looser and used for stacking trays or pallets, not for individual food presentation.

Can I use regular cling film in the freezer?+

Some cling films handle freezer temps fine, others crack and lose their seal. Check the packaging — it should say 'freezer safe' explicitly. When in doubt, use a heavier-gauge PE film rated for cold storage.

Do I need a machine to use heat-seal film?+

Yes. Heat-seal and barrier films require a tray sealer or heat-sealing machine to bond the film to the container. They won't work as hand-wrap. If you don't have a sealer, cling film or stretch wrap are your practical options.

What gauge cling film should I be using in a commercial kitchen?+

Most commercial kitchens run on cling film in the 10–15 micron range for everyday wrap. If you're wrapping awkward shapes, heavy trays, or anything that needs a tighter seal, go to the upper end of that range. Anything below 10 microns is catering-grade light duty and tears easily under prep conditions.

Are there compostable or biodegradable alternatives to plastic food film?+

There are compostable cling film alternatives made from plant-based materials, but they come with trade-offs: shorter shelf life in storage, reduced cling performance, and higher cost per metre. They're a genuine option for operators with sustainability targets, but they're not a straight swap — test before you commit to a carton.
