How to Choose the Right Small Garbage Bag for Your Hospo Operation
Get the size or gauge wrong and you're doubling up bags, splitting liners mid-service, or buying three times what you need.
If you run a café, food truck, bubble tea bar, or any kind of hospo operation, you're going through small garbage bags every single day. The bin under the counter. The one next to the fryer. The little one at the till. Most operators just grab whatever's cheapest without checking the litre capacity, the gauge, or whether it actually fits the bin.
This guide is for Kiwi hospo buyers who want to stop wasting money on the wrong bag. We'll cover sizes, thicknesses, materials, and which bag suits which job so you can order with confidence and not think about it again.
Step 1: Work Out What 'Small' Actually Means for Your Bins
Small garbage bags cover a wide range. In a hospo context, 'small' usually means anything from a 10-litre bin liner up to around 60 litres. That's a big spread. A tiny café counter bin needs a 10L or 15L bag. A back-of-house prep bin might take a 40L or 50L. Call them both 'small' and you'll end up with bags that don't fit.
Measure your bins before you order. Height and diameter matter more than the litre rating printed on the bin itself, because bag manufacturers measure differently. A bag that says 30L might only sit 45cm deep. Check the flat dimensions on the product spec sheet, or contact us and we'll match it for you.
- 10–20L: Counter bins, front-of-house, till areas, small food truck waste
- 25–40L: Mid-bench bins, coffee station waste, bubble tea bar cups and straws
- 40–60L: Prep area bins, back-of-house, fish and chip shop oil-soaked paper
Step 2: Pick the Right Gauge for What Goes in the Bag
Gauge is measured in microns. The higher the number, the thicker the bag. Thin bags (12–15 microns) are fine for dry paper waste and light café rubbish. Put wet food scraps, broken glass, or sharp pizza box offcuts in a 12-micron bag and you're mopping floors by 11pm.
Here's a rough guide for hospo use:
- 12–15 microns: Light dry waste only. Front-of-house paper and napkins.
- 20–25 microns: General kitchen waste. Burger boxes, cardboard scraps, coffee grounds.
- 30–35 microns: Wet, heavy, or food-contaminated waste. Prep scraps, fish skins, sushi trim.
- 35 microns+: Sharp waste, bones, or anything that's going to fight back.
Doubling up on thin bags is not a solution. It costs more per bin than just buying the correct gauge the first time.
Step 3: Compare Your Options Side by Side
There are three main bag types you'll come across for small bins in a hospo setting. Here's how they stack up:
- Standard LDPE liners: Low-density polyethylene. The most common. Good stretch, decent puncture resistance, widely available in bulk. Works for most general waste jobs.
- HDPE liners: High-density polyethylene. Thinner feel but stronger for the gauge. Less stretch. Rustles more. Good for dry waste where you want to pack a lot of bags into a small space.
- Degradable or compostable liners: Look for the AS 4736 or AS 5810 certification if you're making sustainability claims to customers. These cost more per unit and have shorter shelf life. Useful if you're running a certified composting programme, not just for optics.
For most Kiwi hospo operators running high-volume service, standard LDPE in the right gauge is the practical choice. Compostable bags make sense when your waste stream and your council's collection actually support it.
Step 4: Buy in the Right Quantity
Small garbage bags are a consumable. There is no prize for running out mid-Saturday service. Work out your weekly bin turnover per station, multiply by four, and that's your monthly order minimum.
Buying in bulk drops your per-bag cost significantly. A roll of 50 bags bought in a carton of 20 rolls is a very different price to buying single rolls from a supermarket. If you're operating multiple sites, centralise your ordering and split the carton between locations.
Store bags somewhere dry. LDPE degrades in UV light and some degradable bags have a shelf life of 12–18 months from manufacture. Don't buy five years' worth of compostable liners and stack them next to a sunny window.

Most under-counter bins in a hospo setting take a 20–40L bag, but it depends on the bin height and diameter. Measure your bin rather than guessing off the litre label. We can help you match the bag to the bin if you send us the dimensions.
What's the difference between 20-micron and 35-micron bags?+
Thickness. A 20-micron bag handles general dry kitchen waste fine. A 35-micron bag is for wet food scraps, sharp waste, or anything heavy. Using a thin bag for heavy waste costs you more in doubled bags and split liners than just buying the thicker one.
Are compostable small garbage bags worth it for a café or food truck?+
Only if your council's collection or your own composting setup actually accepts them. If the bag ends up in general waste, you've paid more for no environmental benefit. Check your local council's guidelines before switching.
